    In the wet process, the berries are soaked in water to separate the beans from the pulp. The beans are then fermented to remove the mucilage, washed, and dried. This method usually results in cleaner and brighter flavors.

    On the other hand, the dry process involves drying the whole berries in the sun or on raised beds, allowing the beans to dry inside the fruit. Once the berries are dried, they are threshed to remove the outer layers and obtain the green coffee beans.

Green coffee beans are stable and have a longer shelf life compared to roasted coffee. Roasting is the process that transforms the green coffee beans into the brown beans with the characteristic flavors and aromas we associate with coffee.
